Chicken Florentine Casserole with Cheese

Ingredients:
- 2 chicken breasts (sliced)
- 12 oz pasta (penne or rigatoni)
- 10 oz spinach (fresh or frozen)
- 1 cup ricotta cheese
- 1/2 cup mozzarella cheese
- 1/4 cup Parmesan cheese
- 1 cup heavy cream
- 2 garlic cloves (minced)
Cooking Time: 45 minutes
Steps:
- Preheat the oven to 375°F (190°C).
- Cook pasta and drain.
- Sauté chicken until fully cooked, then add garlic and spinach. Cook until spinach wilts.
- In a mixing bowl, combine ricotta, heavy cream, and half of the mozzarella and Parmesan cheeses.
- Mix in the cooked pasta and chicken mixture.
- Transfer everything into a greased baking dish, sprinkle remaining cheeses on top.
- Bake for 20-25 minutes until golden and bubbly.
Tips:
- Use fresh spinach for a brighter flavor, but frozen works fine too.
- Serve with a crisp salad for balance.
