Chicken Florentine Casserole with Cheese

Ingredients:

  • 2 chicken breasts (sliced)
  • 12 oz pasta (penne or rigatoni)
  • 10 oz spinach (fresh or frozen)
  • 1 cup ricotta cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1 cup heavy cream
  • 2 garlic cloves (minced)

Cooking Time: 45 minutes

Steps:

  1. Preheat the oven to 375°F (190°C).
  2. Cook pasta and drain.
  3. Sauté chicken until fully cooked, then add garlic and spinach. Cook until spinach wilts.
  4. In a mixing bowl, combine ricotta, heavy cream, and half of the mozzarella and Parmesan cheeses.
  5. Mix in the cooked pasta and chicken mixture.
  6. Transfer everything into a greased baking dish, sprinkle remaining cheeses on top.
  7. Bake for 20-25 minutes until golden and bubbly.

Tips:

  • Use fresh spinach for a brighter flavor, but frozen works fine too.
  • Serve with a crisp salad for balance.
