8 cups (2 liters) water
4 black or green tea bags (or 2 tablespoons loose-leaf tea)
1 cup granulated sugar
1 cup starter kombucha (from a previous batch or store-bought)
1 SCOBY (Symbiotic Culture of Bacteria and Yeast)
Directions
- Boil 4 cups of water, steep 4 tea bags for 10-15 minutes, then stir in 1 cup of sugar. Add 4 cups of cool water to reach room temperature.
- Pour the cooled sweet tea into a glass jar, add 1 cup of starter kombucha, and carefully place the SCOBY on top. Cover with a cloth.
- Place the jar in a dark, room-temperature spot for 7-10 days, tasting for a balance of tangy and sweet.
- Remove the SCOBY, bottle the kombucha, and add flavorings like fruit or herbs. Seal and leave at room temperature for 2-3 days to carbonate.
- Once carbonated, transfer the bottles to the fridge. Serve chilled, and relish your fizzy, homemade kombucha!
