Chicken Alfredo & Broccoli Rice Casserole

Ingredients:

  • 2 cups cooked chicken, shredded
  • 3 cups cooked rice (white or brown)
  • 2 cups broccoli florets, steamed
  • 1 cup alfredo sauce (store-bought or homemade)
  • 1 cup mozzarella cheese, shredded
  • ½ cup parmesan cheese, grated
  • 1 garlic clove, minced
  • Salt and pepper

Time:

45 minutes.

Steps:

  1. Preheat oven to 375°F (190°C). Cook rice according to package instructions.
  2. Steam broccoli until just tender.
  3. Mix cooked rice, shredded chicken, broccoli, alfredo sauce, and garlic in a large bowl. Season with salt and pepper.
  4. Transfer to a greased casserole dish and top with mozzarella and parmesan.
  5. Bake for 20-25 minutes until golden and bubbly.

Tips:

  • Use rotisserie chicken to save time.
  • Add a pinch of red pepper flakes for some heat.
