2 eggs, beaten
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 cup mini marshmallows
½ cup pecans (optional)
Directions
- Preheat oven to 350°F (175°C). Boil sweet potatoes until tender, about 15 minutes.
- Mash sweet potatoes with butter, brown sugar, eggs, vanilla, and cinnamon.
- Spread mixture into a greased casserole dish. Top with marshmallows and pecans.
