1 large sweet potato (cut into 1/4 inch slices)
1 ripe avocado
1 tbsp olive oil
1/2 tsp sea salt
1/4 tsp black pepper
1/4 tsp red pepper flakes (optional)
Juice of 1/2 lemon
Fresh herbs (like cilantro or parsley) for garnish
Directions
- Preheat the oven to 400°F (200°C).
- Wash the sweet potato and slice it lengthwise into 1/4-inch thick pieces. Brush each slice with olive oil and sprinkle a little salt and pepper.
- Place sweet potato slices on a baking sheet and bake for 20-25 minutes, flipping halfway through, until tender and lightly browned.
- While the sweet potatoes are baking, mash the avocado in a bowl with lemon juice, salt, and pepper. If desired, add red pepper flakes.
- Once the sweet potato slices are done, remove them from the oven. Spread the mashed avocado on each slice.
- Top with fresh herbs, cherry tomatoes, radishes, or a poached egg for extra flavor and texture.
- Serve immediately while warm.
