1 can (15 oz) chickpeas, drained and rinsed
1 tbsp olive oil
1 tbsp maple syrup (or honey)
1 tsp ground cinnamon
½ tsp ground nutmeg (optional)
½ tsp vanilla extract
Pinch of salt
Directions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Dry the chickpeas thoroughly using a paper towel or clean kitchen cloth to remove excess moisture.
- In a bowl, toss the chickpeas with olive oil until evenly coated.
- Spread the chickpeas on the prepared baking sheet in a single layer and roast for 25–30 minutes, stirring halfway, until they are crispy and golden.
- Meanwhile, in a small bowl, mix the cinnamon, nutmeg, maple syrup, vanilla extract, and a pinch of salt.
- Remove the chickpeas from the oven and while they are still hot, toss them in the cinnamon mixture until fully coated.
- Return to the oven for another 5–10 minutes to allow the flavors to caramelize slightly.
- Let them cool for a few minutes before serving.
