Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 1 tbsp olive oil

  • 1 tbsp maple syrup (or honey)

  • 1 tsp ground cinnamon

  • ½ tsp ground nutmeg (optional)

  • ½ tsp vanilla extract

  • Pinch of salt

Directions

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Dry the chickpeas thoroughly using a paper towel or clean kitchen cloth to remove excess moisture.
  • In a bowl, toss the chickpeas with olive oil until evenly coated.
  • Spread the chickpeas on the prepared baking sheet in a single layer and roast for 25–30 minutes, stirring halfway, until they are crispy and golden.
  • Meanwhile, in a small bowl, mix the cinnamon, nutmeg, maple syrup, vanilla extract, and a pinch of salt.
  • Remove the chickpeas from the oven and while they are still hot, toss them in the cinnamon mixture until fully coated.
  • Return to the oven for another 5–10 minutes to allow the flavors to caramelize slightly.
  • Let them cool for a few minutes before serving.
