Ingredients

  • 9 lasagna noodles

  • 1 zucchini, sliced

  • 1 yellow squash, sliced

  • 1 red bell pepper, sliced

  • 1 cup ricotta cheese

  • 2 cups mozzarella cheese

  • 1 jar marinara sauce

  • 1/2 cup Parmesan cheese

Directions

  • Preheat the oven to 375°F (190°C)
  • Cook lasagna noodles according to the package instructions.
  • Layer marinara sauce, noodles, ricotta, veggies, and cheese in a baking dish.
  • Repeat layers, ending with mozzarella and Parmesan on top.
  • Bake for 30 minutes until bubbly.
