12 oz pasta (fusilli or penne)
1 pint cherry tomatoes, halved
8 oz fresh mozzarella (cubed)
2 tbsp olive oil
2 garlic cloves (minced)
1/4 cup fresh basil
Salt & pepper
Directions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Stir in the garlic and cook for 1 minute more.
- Add the cherry tomatoes and basil to the skillet. Cook for 10-15 minutes, or until the tomatoes have softened and burst.
- Toss the cooked pasta with the tomato sauce. Stir in the Parmesan cheese and mozzarella.
- Season with salt and pepper to taste. Serve immediately.
