Ingredients

  • 12 oz pasta (fusilli or penne)

  • 1 pint cherry tomatoes, halved

  • 8 oz fresh mozzarella (cubed)

  • 2 tbsp olive oil

  • 2 garlic cloves (minced)

  • 1/4 cup fresh basil

  • Salt & pepper

Directions

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and set aside.
  • Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Stir in the garlic and cook for 1 minute more.
  • Add the cherry tomatoes and basil to the skillet. Cook for 10-15 minutes, or until the tomatoes have softened and burst.
  • Toss the cooked pasta with the tomato sauce. Stir in the Parmesan cheese and mozzarella.
  • Season with salt and pepper to taste. Serve immediately.
