  • 4 large carrots

  • 1 tablespoon olive oil (optional)

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 2 tablespoons tahini

  • 2 tablespoons olive oil

  • 2 tablespoons lemon juice

  • 1 garlic clove, minced

  • Salt to taste

  • Water (as needed for consistency)

Directions

  • Peel the rainbow carrots to showcase their vibrant colors. Cut them into sticks, about 4-5 inches long and 1/4 inch thick.
  • In a mixing bowl, toss the carrot sticks with olive oil, sea salt, and smoked paprika. This will enhance their flavor and add a smoky depth.
  • In a food processor, combine the chickpeas, tahini, olive oil, lemon juice, minced garlic, ground cumin, ground coriander, cayenne pepper, and salt.
  • Blend until creamy, adding water gradually until you achieve your desired consistency smooth and easy to dip.
  • Taste and adjust the seasoning as needed. For a touch of flair, top with a drizzle of olive oil and a sprinkle of paprika before serving.
  • Arrange the colorful carrot sticks on a serving platter. Place the spiced hummus in a bowl at the center for dipping. Garnish with fresh parsley if desired.
