Ingredients

  • 1 cup rolled oats

  • ½ cup unsweetened nut butter (e.g., almond, peanut, or cashew)

  • ½ cup honey or maple syrup

  • ½ cup dried cranberries, chopped

  • ¼ cup chopped nuts (e.g., almonds, walnuts, or pecans)

  • ¼ cup ground flaxseed (optional)

  • 1 tsp vanilla extract

  • ½ tsp cinnamon (optional)

  • Pinch of salt

Directions

  • In a large mixing bowl, combine the rolled oats, chopped dried cranberries, chopped nuts, ground flaxseed (if using), cinnamon (if using), and salt.
  • In a separate bowl, mix the nut butter, honey or maple syrup, and vanilla extract until smooth.
  • Pour the wet mixture into the dry ingredients and stir until everything is well combined. The mixture should be sticky and hold together.
  • With clean hands, scoop out small portions of the mixture (about 1 tablespoon each) and roll them into balls. Place them on a baking sheet lined with parchment paper.
  • Refrigerate the energy bites for at least 30 minutes to firm up.
  • Once set, transfer the energy bites to an airtight container. They can be stored in the refrigerator for up to a week or frozen for longer storage.
