Ingredients

  • 1 package frozen cauliflower rice

  • 2 cups cooked chicken (shredded)

  • 1 cup mixed vegetables (peas, carrots, corn)

  • 2 cups chicken broth

  • 1 tsp thyme

  • 1 tsp garlic powder

  • Salt and pepper to taste

  • 1 cup almond milk (or regular milk)

Directions

  • Preheat the oven to 400°F (200°C).
  • In a pan, combine chicken, mixed vegetables, chicken broth, thyme, garlic powder, salt, and pepper. Cook until heated.
  • In a separate pot, steam cauliflower rice until soft, then blend with almond milk until creamy.
  • Pour the chicken mixture into a baking dish and top with cauliflower mash.
  • Bake for 20 minutes until golden.
