2 cups cooked chicken (shredded)
1 cup mixed vegetables (peas, carrots, corn)
2 cups chicken broth
1 tsp thyme
1 tsp garlic powder
Salt and pepper to taste
1 cup almond milk (or regular milk)
Directions
- Preheat the oven to 400°F (200°C).
- In a pan, combine chicken, mixed vegetables, chicken broth, thyme, garlic powder, salt, and pepper. Cook until heated.
- In a separate pot, steam cauliflower rice until soft, then blend with almond milk until creamy.
- Pour the chicken mixture into a baking dish and top with cauliflower mash.
- Bake for 20 minutes until golden.
