1 pound rotisserie chicken, shredded
16 ounces egg noodles, cooked according to package directions
1 large onion, chopped
2 cloves garlic, minced
2 tablespoons butter
1/4 cup all-purpose flour
3 cups chicken broth
1 cup heavy cream
1/4 cup fresh lemon juice
1/4 cup chopped fresh dill
Salt and pepper to taste
Directions
- Preheat your oven to 350°F (175°C).
- In a large skillet, melt butter over medium heat. Add onion and garlic, and cook until softened, about 5 minutes.
- Sprinkle flour over the onion and garlic, and cook for 1 minute. Gradually whisk in chicken broth and heavy cream until smooth. Bring to a simmer and cook for 5 minutes, or until thickened.
- In a large bowl, combine shredded chicken, cooked noodles, lemon juice, dill, and the creamy sauce. Season with salt and pepper to taste.
- Pour the mixture into a greased 9x13 inch baking dish. Bake for 30-35 minutes, or until bubbly and golden brown.
