Creamy Squash Casserole

Ingredients:

  • 3 cups yellow squash, sliced
  • 1 onion, diced
  • 1 cup sour cream
  • 1 cup cheddar cheese, shredded
  • ½ cup breadcrumbs
  • 2 eggs
  • 2 tablespoons butter
  • Salt and pepper

Time:

1 hour.

Steps:

  1. Preheat oven to 350°F (175°C). Sauté squash and onion until tender.
  2. Mix eggs, sour cream, cheddar cheese, and seasoning.
  3. Combine the squash mixture with the creamy mixture. Pour into a greased dish.
  4. Top with breadcrumbs and bake for 30-35 minutes.

Tips:

  • Use panko breadcrumbs for extra crunch.
  • Add a sprinkle of paprika for a bit of heat.
