Creamy Squash Casserole

Ingredients:
- 3 cups yellow squash, sliced
- 1 onion, diced
- 1 cup sour cream
- 1 cup cheddar cheese, shredded
- ½ cup breadcrumbs
- 2 eggs
- 2 tablespoons butter
- Salt and pepper
Time:
1 hour.
Steps:
- Preheat oven to 350°F (175°C). Sauté squash and onion until tender.
- Mix eggs, sour cream, cheddar cheese, and seasoning.
- Combine the squash mixture with the creamy mixture. Pour into a greased dish.
- Top with breadcrumbs and bake for 30-35 minutes.
Tips:
- Use panko breadcrumbs for extra crunch.
- Add a sprinkle of paprika for a bit of heat.
