Vegan Burrito Bowls with Cauliflower Rice

Ingredients:

  • 1 package frozen cauliflower rice
  • 1 can black beans (drained and rinsed)
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes
  • 1 avocado (sliced)
  • 1 lime (juiced)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)

Time:

25 minutes

Steps:

  1. In a pan, heat the cauliflower rice over medium heat until warmed through.
  2. Stir in black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper. Cook for 5-7 minutes.
  3. Serve in bowls topped with avocado slices, lime juice, and cilantro.

Benefit:

High in fiber and protein, low in carbs.

Tip:

Add toppings like salsa, vegan cheese, or hot sauce for extra flavor.
