Vegan Burrito Bowls with Cauliflower Rice

Ingredients:
- 1 package frozen cauliflower rice
- 1 can black beans (drained and rinsed)
- 1 cup corn (frozen or canned)
- 1 cup diced tomatoes
- 1 avocado (sliced)
- 1 lime (juiced)
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro (for garnish)

25 minutes
Steps:
- In a pan, heat the cauliflower rice over medium heat until warmed through.
- Stir in black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper. Cook for 5-7 minutes.
- Serve in bowls topped with avocado slices, lime juice, and cilantro.
