Ingredients

  • 1 package frozen cauliflower rice

  •  1 onion (chopped)

  • 2 cloves garlic (minced)

  • 1 cup vegetable broth

  • 1 cup spinach (fresh)

  • 1/2 cup nutritional yeast

  • 1 tbsp olive oil

  • Salt and pepper to taste

Directions

  • In a skillet, heat olive oil and sauté onion and garlic until soft.
  • Add cauliflower rice and vegetable broth. Cook until tender (about 7-10 minutes).
  • Stir in spinach, nutritional yeast, salt, and pepper. Cook until spinach wilts.
  • Serve warm
