1 cup vegetable broth
1 cup spinach (fresh)
1/2 cup nutritional yeast
1 tbsp olive oil
Salt and pepper to taste
Directions
- In a skillet, heat olive oil and sauté onion and garlic until soft.
- Add cauliflower rice and vegetable broth. Cook until tender (about 7-10 minutes).
- Stir in spinach, nutritional yeast, salt, and pepper. Cook until spinach wilts.
- Serve warm
